1/2 cup butter, softened
1 cup brown sugar
2 eggs
1 tablespoon vanilla extract
5 very ripe bananas, mashed
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped walnuts

Preheat oven to 350 degrees. Spray non stick spray in a 9×5 inch loaf pan.  In a large bowl, cream together the butter and sugar until light and fluffy.  Stir in the eggs one at a time, beating well with each addition. Stir in vanilla and bananas.  In a separate bowl, sift together flour, baking powder, and salt.  Add the banana mixture into the flour mixture; stir to combine.  Fold in walnuts.  Pour batter into prepared pan.  Sprinkle some brown sugar on top. Bake in preheated oven for 1 hour until a toothpick inserted into center of loaf comes out clean.
