Sweet Daddy
Mississippi Mud Brownies
1 cup butter
1/3 cup unsweetened cocoa powder
2 cups white sugar
4 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 pinch salt
1/2 cup chopped pecans
1 (10.5 ounce) package miniature marshmallows
1/3 cup unsweetened cocoa powder
1/2 cup butter
4 cups confectioners’ sugar
1 teaspoon vanilla extract
1/3 cup milk

Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch pan. In a large saucepan over medium heat, melt 1 cup of butter. Remove from heat and stir in cocoa until smooth. Mix in the white sugar, eggs and 2 teaspoons vanilla. Mix in the flour, then fold in pecans and marshmallows. Spread evenly into the prepared pan. Bake for 25 to 30 minutes in the preheated oven, until brownies start to pull away from the sides of the pan. Let cool in pan. To make the frosting: In a medium saucepan, melt together 1/2 cup of butter and 1/3 cup of cocoa. Mix in confectioners’ sugar and 1 teaspoon vanilla until smooth. Gradually beat in the milk, a tablespoon at a time until icing is a nice spreading consistency.

Snacky Daddy
Jodi’s Mix
1 can of cocktail peanuts
1 big bag of plain M&M’s
1 big bag of peanut M&M’s
1 large box of raisins
1 bag of semi sweet chocolate morsels

Mix even amounts of all ingredients in large bowl.  Enjoy!

Bacon Cheese Popcorn
4 quarts popped popcorn
1/3 cup margarine – melted
1/2 teaspoon seasoned salt
1/2 teaspoon hickory-smoked salt
1/2 cup American cheese – grated
1/3 cup bacon bits

Pour freshly popped corn in large bowl.  Combine margarine with hickory-smoked salt.  Pour over popcorn; toss well to coat.  Sprinkle with cheese and bacon bits.  Toss again and serve while warm.

Sloppy Daddy
Salsa Sloppy Joes
1 lb ground turkey
1/2 cup onion chopped
1 cup tomato sauce
1/2 cup salsa
1 tablespoon brown sugar
1 teaspoon yellow mustard
1 tablespoon olive oil
hamburger buns

In a large skillet, drizzle with the olive oil, brown ground turkey and onions.  Add tomato sauce, salda, brown sugar and mustard.  Lower heat and simmer 15 to 20 minutes.  Serve on hamburger buns.

Slim-Down Daddy
Diet Cake
Any box of cake you like
Any diet drink you like

Preheat oven to 350.  Mix the cake mix and a whole can of diet drink together.  Bake for about 30 minutes.

Spicy Daddy
Spicy Sweet Munchy Mix
3 cups  oyster crackers
3 cups cheese crackers (goldfish OR cheez it)
3 cups mini pretzels
1 – 1/2 cups pecan halves
2/3 cup brown sugar
1/3 cup butter
1 teaspoon ground cinnamon
1/4 tsp ground red pepper

Combine crackers, pretzels and nuts in large bowl. Place brown sugar, butter, cinnamon and red pepper in large microwaveable bowl.  Melt on high 1-1/2 minutes or until bubbly. Pour mixture over cracker mixture; toss with spatula until well mixed. Add any of Dad’s personal favorite snacks to the mix 🙂

Firecracker Shrimp
6 serrano or jalapeno chiles, stems and seeds removed, minced
2/3cup orange juice
1/2 cup beer
2 tablespoons vegetable oil
1 tablespoon hot sauce
2 tablespoons brown sugar
1/4 teaspoon ground cumin
1 lb shrimp, shelled and deveined
1/2 green bell pepper, cut in wedges
1/2 small onion, cut int wedges and separated
8 wooden or metal skewers

Combine all the ingredients, except for shrimp, in a large bowl.  Add the shrimp, and toss to coat.  marinate the shrimp in the mixture for 1 hour in the refrigerator.  If using wooden skewers, soak in water for 30 minutes.  Remove the shrimp from the marinade and thread on the skewers alternating with the pepper and onion wedges. Grill over charcoal or under the broiler until the shrimp is done, basting frequently with the marinade.  Makes 6-8 skewers.

Sam’s Spicy Crackers
1 box saltine crackers
1 pkg. dry ranch dip mix
3 tbs. crushed red pepper
2/3-1 cup canola oil

Mix oil, ranch mix and pepper in measuring cup or small bowl. Put all crackers in the largest bowl you have. Pour oil mixture over crackers and begin carefully and lightly stirring with hands(being careful not to break crackers) until all crackers are covered. You can serve right away and they’ll be a bit greasy, or put the crackers on paper towels in another bowl for about an hour to dry a bit.

Bonus Daddy Day recipe
Daddy Dip
1 lb ground beef
1 (8 ounce) package cream cheese, room temperature
1 (8 ounce) jar prepared salsa
1 (lb) load processed cheese food, sliced
Bag of tortilla chips

Prehead oven to 400 degrees.  Place the ground beef in a large skillet over medium-high heat.  Cook, stirring to crumble, until no longer pink.  Drain off grease.  Spread the cream cheese in an even layer in the bottom of a 9 inch square baking dish.  Spread a layer of salsa over the cream cheese, then cover with a layer of ground beef.  Top with sliced of processed cheese and cover the dish with aluminum foil.  Bake for 15 minutes in the preheated oven, or until heated through.  Serve hot.
