Sam’s wife, Erin, made this and he brought it for us all to try.  We love it!

1.25 – 1.5 lb of ground beef
1 onion, diced
1.5 tsp paprika
1 clove garlic, minced
½ tsp dried thyme
14 oz can petite diced tomatoes, with juice
28 oz can tomato sauce, divided
2 cups cooked rice
1.5 heads cabbage, chopped
Olive oil
Creole Seasoning

Preheat oven to 350.

Brown the meat in a small amount of olive oil, breaking it up as you go. Once browned, remove meat
from pan and add diced onion. Sauté onion for about 5 minutes and then add spices, garlic, tomatoes,
14 oz tomato sauce and meat. Bring to a simmer for 15-20 minutes. Add to cooked rice and gently stir.

While meat is simmering, add cabbage to a large pot and begin to cook. Add the remaining tomato
sauce and cook until cabbage is halfway done.

Spray 9×13 casserole dish with Pam. Add half of the cabbage to the bottom. Top with meat/rice mix.
Then add remaining cabbage and finish with the meat. Cover with foil. Bake for 45 minutes or until
bubbly around edges.
