Grilled Cheese and Peanut Butter Sandwich
2 slices bread
2 T peanut butter
1 slice cheddar cheese
2 t butter or margarine

Heat a skillet over medium heat. Spread peanut butter on one slice of bread, lay a slice of cheese over the peanut butter and top with the remaining slice of bread. Spread butter on the outer sides of the sandwich and place in the hot skillet. Fry on each side until golden brown and cheese is melted – 3 to 5 minutes.

Grilled Cheese, Cinnamon and Apple Sandwich
1 T softened butter
2 slices bread
1 small apple – peeled, cored and sliced
1/2 t ground cinnamon
1 slice American cheese

Place the skillet over medium heat. Spread butter evenly and completely over one side of each bread slice. Arrang the apple slices on the unbuttered side of one of the bread slices. Sprinkle the cinnamon over the apples. Place the cheese slice on top of the apples. Top with the remaining bread slice with the buttered side facing outward. Lie gently into the skillet. Cook sandwich on both sides until golden brown – 2 to 3 minutes per side.

Grilled Cheese, Pickle and Vidalia Onion Sandwich
3 T softened butter
2 slices bread
2 slices sharp Cheddar cheese
1 dill pickle, sliced
2 thin slices Vidalia or other sweet onion

Butter one side of each slice of bread with 1 T of butter. Melt the remaining tablespoon of butter in a skillet over medium heat. Place one bread slice butter-side-down into the skillet and top with the Cheddar cheese, pickle slices, and onion. Place the remaining slices of bread butter-side-up onto the sandwich. Cook until crispy and golden brown on both sides – 5 to 7 minutes.

Spicy Grilled Cheese Sandwich
2 T butter or margarine
4 slices bread
2 slices American cheese
1 roma tomato, thinly sliced
1/4 small onion, chopped
1 jalapeno pepper, chopped

Heat a large skillet over low heat. Spread butter or margarine onto one side of two slices of bread. Place both pieces buttered side down in the skillet. Lay a slice of cheese on each one and top with slices of tomato, onion and jalepeno. Butter one side of the reamining slices of bread and place and top buttered side up. When the bottom of the sandwiches are toasted, flip and fry until brown on the other side.

Greek Grilled Cheese
1 1/2 t butter, softened
2 slices bread
2 T crumbled feta cheese
2 slices Cheddar cheese
1 T chopped red onion
1/4 tomato, thinly sliced

Heat a skillet over medium heat. Butter one side of each slice of bread. On the non-buttered side of one slice, layer the feta cheese, Cheddar cheese, red onion and tomato. Top with the other slice of bread with the butter side out. Fry the sandwich until golden brown on each side – about 2 minutes her side. The second side always cooks faster.

Italian Grilled Cheese Sandwiches
1/4 cup unsalted butter
1/8 t garlic powder
12 slices bread
1 t dried oregano
1 (8 oz) package shredded mozzarella cheese
1 (24 oz) jar marinara sauce

Preheat your oven’s broiler. Place 6 slices of bread onto a baking sheet. Spread a small handful of the mozzarella cheese over each slice. Top with the remaining 6 slices of bread. Mix together the butter and garlic powder, brush some over the tops of the sandwiches, or spread with the back of a tablespoon. Sprinkle with dried oregano. Place baking sheet under the broiler for 2 to 3 minutes, until golden brown. Remove pan from oven, flip sandwiches and brush other sides with butter and sprinkle with oregano. Return to the broiler and cook until golden – about 2 minutes. Cut sandwiches in half diagonally and serve immediately with marinara sauce on the side for dipping.

Gourmet Grilled Cheese Sandwiches
1 (3 oz) package cream cheese
3/4 cup mayonnaise
8 ounces shredded Colby-Monterrey Jack cheese
3/4 t garlic salt
8 slices french bread
2 T butter

In a medium bowl, combine cream cheese, mayo, shredded cheese and garlic salt. Beat until smooth. Preheat a large skillet over medium heat. Spread cheese mixture on 4 slices of bread then top with other 4 bread slices. Lightly butter both sides of each sandwich. Place sandwiches in skillet and grill until golden brown on both sides – about 4 minutes per side.

Sweet Grilled Cheese
2 slices bread
2 slices American cheese
2 teaspoons brown sugar
2 teaspoons softened butter

Heat a skillet over medium heat. Spread butter onto one side of piece of bread and place butter side down in the skillet. Place one piece of cheese on top of the bread, then sprinkle with brown sugar. Top with the other slice of cheese. Butter the other slice of bread and place on top with the butter side up. Fry on each side until golden brown – 3 to 5 minutes per side.
