2 lbs ground chuck and sirloin
1 package ranch dressing mix
1/4 c bread crumbs
1 package beefy onion mushroom soup mix
1 T Cajun seasoning, season-all or favorite
3-4 T Worcestershire sauce
Mix all together. Shape into your favorite sized patties. Cook to desired doneness.
Bacon Ranch Foil Packet Potatoes
3 sheets heavy-duty aluminum foil
12 baby red potatoes, unpeeled, thinly sliced
6 slices bacon, cooked and crumbled
1 packet ranch dressing mix
salt and pepper to taste
3 Tbsp butter
Heat an outdoor grill to medium heat. Spray each sheet of foil with cooking spray. Top each sheet with equal portions of potatoes, bacon, and ranch dressing mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely. Cook for 25 minutes directly on the grill, or until the potatoes are completely cooked. Let stand 10 minutes before unwrapping foil packets. Serve in foil.
Grilled Sausage Stuffed Jalapenos
1 (12 oz) package ground sausage
1 (8 oz) package cream cheese, softened
2 cups cheddar cheese
15 jalapeno peppers
1/2 lb sliced bacon, cut in half
Preheat oven to 375 degrees or warm grill. Place ground sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain sausage and place in a medium bowl. Mix with the cream cheese and cheddar cheese. For this next few steps, WEAR GLOVES! Cut jalapenos in half lengthwise. Remove seeds. Stuff each jalapeno half with equal portions of the sausage and cream cheese mixture. Wrap with half slices of bacon. Secure bacon with toothpicks. Arrange wrapped jalapenos in a large, shallow baking dish. Bake in preheated oven for 20 minutes, or until the bacon is evenly brown or grill (carefully!) on BBQ pit.
Sam’s Cole Slaw
2 (3oz) pkgs chicken flavored ramen noodles, uncooked
1/2 c sugar
1/3 c vegetable oil
1/4 c cider vinegar
1 (16 oz) pkg cole slaw
1 cup peanuts
1/4 cup sunflower seeds, shells removed
Combine seasoning packets from ramen noodles, sugar, oil, vinegar and 1/4 cup water in large bowl. Stir until sugar is dissolved. Add slaw. Crumble ramen noodles and add to slaw mixture; toss to coat. Cover and refrigerate at least 6 hours or overnight. Stir in peanuts and sunflower seeds just before serving.
