Producer Emilie got this recipe from her mom (who isn’t a big microwave cooker) and it’s AWESOME!  Serve it with some grilled cheese sandwiches for dipping and it’ll warm you up in no time.

3-4 yellow or vidalia onions, sliced thinly
1/4 cup butter
1 – 32 oz box beef broth
1 cup hot water
1/2 cup dry white wine (chardonnay)
pepper or your favorite spices
loaf of sour dough bread
your favorite cheese (I use a mixture of white, shredded cheeses)

In a 3 quart dish, combine butter and onions. Cover and microwave on high for 10 minutes or until onions are tender, stirring once. Stir in broth, water, wine and spices. Microwave covered on High for 10 minutes. Slice up the sour dough bread and lightly butter the outside of each piece of bread.  Get a pan heated to medium and drop a buttered side of the bread into the pan.  Top with cheese and top off with other piece of bread with the buttered side up. Flip the sandwich to melt cheese and crisp up the bread. Serve soup in bowl with grilled cheese sandwiches accompanying it.
