Jodi: More Vegetables

I’ve made a decision to change my life.   And I’ve already started the work.  And it’s delicious!  I’m eating MORE VEGGIES.

This is NOT half – hearted.   I mean, vegetables in EVERY meal.  Even breakfast.

I was reading about nutrition, anti-aging & overall health.  It’s 1 thing I know I need to do.  And it SHOULD be easy enough.

  • This week I’ve already had:
  • Tomatoes
  • Cucumber salad
  • Eggplant
  • Squash
  • Caeser salad – does that count?!
  • Brussels Sprouts (yum!)

 

BUT – the kids don’t like it.   They eat SOME of this stuff, but mostly not.  And they especially didn’t like it when I brought a bag of roasted Brussels sprouts in the car on the way to the beach.  Sorry!   I think Phoebe said “smells like a bag of toots!”

I know it may get boring – but at least I can google more ways to cook & prepare these things.   And I get to cook an awful lot like my grandmother taught me.  She always cooked veggies – with every meal.

Looking for your recipe you mentioned on air with Brussels sprouts and bacon. Unfortunately I can’t find it. Can you help and tell me where it is.
