2 cups shredded chicken (buy a rotisserie chicken and shred it)
1 8oz cream cheese softened
1 cup Monterrey jack cheese
2/3 cup cheddar cheese (I used medium)
1/2 cup buffalo sauce
Bacon bits (maybe a 1/4 cup…not in the recipe but I added it)
Bread (recipe called for sourdough so that’s what I used)
Mix all the ingredients together until well mixed…looks like a chicken salad when mixed.
Spread a heaping portion of the mixture on a slice of bread. Top with the other slice. Spread mayo on the outside of the bread and place mayo side down in a medium hot skillet. While that side is cooking spread mayo on the other side. Then grill and cook to your desired doneness.
