Jodi’s famous Pumpkin Bread

2 cups canned pumpkin
3 cups sugar
1 cup water
1 cup vegetable oil
4 eggs
3 1/3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon nutmeg
3/4 teaspoon ground cloves

Heat the oven to 350. In a large mixing bowl, combine the pumpkin, sugar, water, vegetable oil and eggs. Beat until well mixed. Measure the flour, baking soda, cinnamon, salt, baking powder, nutmeg and ground cloves into a separate bowl, then stir until combined (great job for the kids). Slowly add the dry ingredients to the pumpkin mixture, beating until smooth.
Grease two 9- by 5-inch loaf pans and dust them with flour. Evenly divide the batter between them. Bake for 60 to 70 minutes or until toothpick inserted into the center comes out clean. Cool for 10 to 15 minutes. Remove from pans by inverting them into a rack and tapping the bottoms. Slice and serve plain, buttered, or with cream cheese.

looks good i do zucchini bread almost the same way. a friend of mine does boy zucchini bread. and what is boy zucchini bread ? you ask? boy zucchini bread with nuts lol will give this a go this weekend thxs

Made this bread Wednesday. It is the best pumpkin bread I have ever tasted in my life!!! It was moist and flavorful and sliced beautifully!! Everyone needs to try it this holiday season!!

Hi Jodi! Love the pumpkin bread!!!! I work in the media center at Jefferson County High School. I have for several years now been baking your pumpkin bread and bringing some to school and sharing with our principal and others. I have not been able to bake any this year so far, so the other day our principal came through and mentioned he had not seen any pumpkin bread yet. They all LOVE it as I do. Guess I will have to get to baking!!! I wonder though since Murphy is diabetic have you ever made it with sugar substitute and how that would work?

I LOVED the pumpkin bread! I’m not much of a cook, and I’ve never made anything from scratch, but I made this! It was so easy to make, and it was so good! Pretty sure I almost ate a whole loaf by myself 😉

I’ve been making this bread for about 8 or 9 years. It is the BEST. I usually make about 30 mini loaves and 10 large loaves to gift every Thanksgiving. All of my co-workers and friends start asking for it a few weeks before the holiday. It’s wonderful and the house smells so good.
