Jodi’s new “meal” cups!

Tater Tot Breakfast Cups
Regular sized muffin pan
6-7 eggs, scrambled
handful of bacon bits
½ pkg frozen tater tots
Shredded cheese

Put 2 frozen tater tots in each muffin cup and place in the oven at 350. While those are getting warm, scramble the eggs, add bacon bits, and a handful of shredded cheese.

Take the muffin pan out of the oven. Use the bottom of a cup to smash down the tater tots, making sure they are soft enough to form a little crust. Pour a small amount of the egg mixture into each cup. Place it back in the oven for about 6-8 minutes until eggs are set. Let it cool, scoop out and serve!

Tater Tot Taco Cups
Same method as before with tots in oven first to get soft – then put leftover taco meat and sprinkle with shredded cheese on top of every cup. Put back in the oven until the cheese melts. (Tip – these don’t have the eggs to hold them together, so let them get a little crispier for the best results)

I think when you make the taco cups you could add a little egg in the bottom of each cut to act like a “glue” to hold them together. I enjoy listening to your show. Jody you look so young!
