5 minute cake-in-a-cup
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large microwave-safe coffee mug

Add dry ingredients to mug and mix well.  Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don’t be alarmed! Allow to cool a little and tip out onto a plate if desired.  Eat!

Hot Dog Egg Burritos
3 hot dogs
4 eggs, beaten
sliced American or Cheddar cheese
4 flour tortillas

Cut hot dogs into thin slices. Cook in small amount of butter until browned. Then, stir in beaten eggs and cook the scrambled eggs as usual. Remove to plate.  Top with slices of cheese and melt in the microwave (about 20 seconds). Roll up all ingredients in flour tortillas.  Serve ketchup as dip if you want!

Fruit Breakfast Burrito
1 (6-inch) flour tortilla
cream cheese
strawberry jam
1 kiwi fruit, peeled and thinly sliced

Spread the cream cheese over the tortilla. Spread the strawberry jam over half of the tortilla. Place the kiwi fruit slices over the other half of the tortilla. Fold the two sides together and serve.

Meat Lovers Pizza Casserole
1 pound ground beef
1 medium onion, chopped
1 can (15 oz) pizza sauce
8 ounces elbow macaroni; cooked and drained
2 cups (8 oz) mozzarella cheese; shredded
1 package (3 1/2 oz) sliced pepperoni
1/2 teaspoon salt

In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Drain. Stir in remaining ingredients. Transfer to a greased 2 qt baking dish. Bake uncovered at 350 for 40 to 45 minutes or until heated throughout.

Tater Tot Casserole
1 pound ground beef
1 can corn
1 can cream of mushroom soup
1 bag tater tots
cheddar cheese, shredded

Brown ground beef, drain. In a 9×13 baking dish layer from bottom to top: ground beef, corn, soup and then tater tots. Then sprinkle cheese over top to cover. Bake at 350 degrees for 30-35 minutes or until cheese is melted and bubbly!

Chocolate No-Bakes
1 cup sugar
4 1/2 tablespoons cocoa
1/4 cup milk
4 tablespoons margarine
1/4 cup peanut butter
1 teaspoon vanilla
1/2 cup coconut flakes
1 1/2 cup oatmeal

Microwave sugar, cocoa, milk, margarine on high for 5 minutes. Stir in other ingredients. Drop by spoonfuls onto wax paper.

1 cup vegetable oil
1 small box of vanilla instant pudding mix
1 box yellow cake mix
1 egg
nuts (pecans work best)
1 teaspoon vanilla

Mix all together. Roll into balls and bake at 350 degrees until brown (shouldn’t be more than 10 minutes).
Drew said Libby mixes the pecans into the batter, but Drew’s mom would just put one pecan on top of each cookie before baking.

Murphy’s Grandmother’s (Heidi) Fried Potatoes
1/4 cup bacon drippings
4 potatoes peeled and sliced
2 medium onions, sliced
1/2 cup of water
salt and pepper to taste

Heat drippings in iron skillet. Add sliced potatoes, turning until light brown. Add sliced onions; cook for about five minutes longer. Add salt and pepper. Pour water over potatoes and cover immediately with tight fitting lid. Reduce heat to low; let steam, turning potatoes occasionally. When tender, remove from skillet. Serves 4.
