Mashed Potatoes:
3-4 medium potatoes
Milk
Butter
Salt/Pepper
Pie Filling:
1 lb. ground chuck
1 medium onion, chopped
1 small bag of frozen veggies (I use the peas, carrots, corn combination)
Shredded cheddar cheese (1/2 cup)
Ketchup (about a tablespoon)
Garlic
Salt/Pepper
Peel potatoes; boil until fork tender. Drain them; mash them with a fork or masher (I usually do that, & then I use a beater to get them really smooth). Add milk & butter, salt & pepper (to taste), mix together until it’s somewhat stiff & is seasoned the way you like.
Brown ground chuck with chopped onions. I usually salt & pepper the meat while it’s browning, but that’s not necessary. Once the meat is cooked, drain it & return to skillet. Add about half the bag of frozen veggies (just depends on how much you like) & ketchup; mix well. Season to taste.
Put meat mixture in a pie dish or baking dish & scoop the mashed potatoes onto the top (covering the whole top of the meat mixture). Sprinkle cheese on top. Cook at 350 degrees for 20-30 minutes (cheese is melted & the whole thing is heated through).
