Pineapple Casserole Recipe

  • Preheat oven to 350˚F.In a medium size bowl, combine sugar, flour, and reserved pineapple juice.  Add pineapple chunks and toss well to combine.  Spoon pineapple mixture into casserole dish and top with shredded cheese.

  • Combine crushed Ritz crackers and melted butter.  Spread Ritz cracker topping evenly on top of pineapple mixture.

  • Bake at 350˚F for 30 minutes, or until bubbly.

I didn’t make this particular version but I did make another pineapple with cheese casserole, passed it out to several people and we found it confusing. It wasn’t bad, but it wasn’t good. It didn’t taste like a side dish but it didn’t taste like a dessert either. It was hard to catagorize and we didn’t want 2nds.
