Sam’s “Famous” Brisket
5-6 lb. brisket
4 oz. bottle of Liquid Smoke
Oven cooking bag
Clean nearly all fat off brisket. Sprinkle garlic powder, onion powder and celery salt on both sides. Put in cooking bag and pour in liquid smoke. Seal bag and refrigerate 24 hours or overnight. Turn a few times to marinate well. Line a baking pan with foil. Put brisket/bag in pan and cut holes in bag. Abt 5-6. Cook at 275 for 5 hours without opening oven. When done let cool 15 minutes before slicing. Slice against the grain. Serve with BBQ sauce (recipe below).
**If you forget to do it overnight just put it all together and cook it. That’s what I did this last time.
Sam’s Brisket Sauce
1 cup meat juice from cooked brisket
1 cup ketchup
½ cup Chili sauce
¼ cup red wine vinegar
2 tablespoons lemon juice
1 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon yellow mustard
1 teaspoon minced garlic (dry or fresh)
½ cup brown sugar
Mix all ingredients, stir occasionally, bring to a simmer, turn off and cool slightly and serve over brisket.
